Ingredients

1 cup ricotta cheese
1 cup cottage cheese
1 Tbsp butter
1 cup masarepa corn flour (fine ground)
1 egg
3 Tbsp milk
½ tsp baking powder

Preheat oven at 400° F. Line a baking sheet with parchment paper and set aside.

In a large bowl, combine cheeses, butter, and masarepa flour. Add the egg, milk, and baking powder and mix well with a pastry blender or pastry cutter. Work with hands to form a dough.

Remove dough from bowl and divide into 6 to 8 equal parts; shape into balls. Place on parchment-lined baking sheet and bake for 25 to 30 minutes.
