Preheat the oven to 400°.

In a small bowl, stir together butter, maple syrup, and chopped thyme.

Place chicken in a roasting pan and stuff the cavity with the lemon quarters and all but 4 of the thyme sprigs.

Slide hands under the chicken's skin to loosen.

Spread half of the butter mixture between the loosened skin and the meat.

Rub the remaining butter mixture on top of the skin and season with salt and pepper.

Roast chicken about 1 ½ hours.

Garnish with the additional thyme sprigs.
